Standard Operating Procedure
Overview
This is guide is to give a rough outline of daily set up, service and breakdown for DAX + MARGS implementation at Frost Bank Center.
Pre-Game
2 hours prior to game
Put on Apron uniform from the back of house area – notify your manager if aprons need to be cleaned and pressed.
Fill front shelving with souvenir cups to adequate levels (do not overfill, ensure cups can be removed with ease).
Check back stock for souvenir cups and notify manager if additional cups are needed.
Fill all napkin holders (do not overfill, ensure napkins can be removed with ease).
Fill all straw caddies (do not overfill, ensure straws can be removed with ease).
Turn on machines and begin cooling process.
Batch frozen cocktail mixes according to recipes in square cambros.
Add to machines no less than 1 hour prior to service to ensure proper consistency.
Ensure multiple batches of mix are prepared and ready for game time. Quantities should reflect ticket sales and daily needs.
One batch recipe = 1 cambro = 1 machine fill (about 3 gallons).
Label cambros with the flavor and date of the batch.
Game Time
During game time, cleanliness & stocking are key!
Consistently wipe down drink area with a wet/damp towel.
Key points: the area should not be sticky. The area should not be overly wet with water pooling in areas.
Sweep and mop the area in a way that does not interfere with guest experience but ensures the guest is safe.
Watch for opportunities to stock cups and straws as necessary.
When a machine is nearing empty, add mix to the machine and place a “refreezing in progress sign” on the spout. Direct customers to another machine if they try to fill their cup at that machine.
Do not refill machines if the event is nearing an end and traffic has died down.
Post Game
Turn off all machines to allow mix to unfreeze.
Remove mix from machines and clean according to manufacturer directions.
Wipe down counters with approved soap/water solution, disinfect area and have ready for next event.
Stock all areas as appropriate.
Additional Notes
This is a pilot property for a new brand, there will be hiccups. Learn, document and make note for discussion AFTER the service.
Unless the item of note is of a safety concern, then solve it immediately.
Cleanliness again is the most important part of making this brand succeed. This is a fun and exciting concept that relies on it’s look and cleanliness to showcase the product. Keep that in mind.
